Homemade fish sticks!

Fish is so good for you and such a healthy alternative for your kids. Unfortunately, I have struggled to find recipes for fish that don't involve a deep frier and that make me want to eat it again (or even finish it the first time!) So, in my quest for delicious recipes to serve the family coming in to visit next week, I found this great recipe for home made fish sticks. I tried it out for lunch today on my SUPER picky eaters and it was a hit! So, here is the recipe:

Start out with a nice white fish like Flounder or Talapia, bread crumbs, planko, or crushed corn flake cereal. (I used Planko, which is a Japanese style breadcrumb)
breadcrumbs & seasoning I used

Whole flounder fillet

fish will easily divide down the middle
cut each piece into three even sections
make sure to keep the pieces as even as possible
make sure to get both sides
coat all sides really well
ready to bake!
  1. Next you will need to cut up your fish. First I split it down the middle to make it easier to work with.
  2. Then I cut each piece evenly into three sections.
  3.  Slice each piece length wise into strips.
  4. Mix three to four eggs in a shallow bowl and then coat fish strips thoroughly.
  5. Next coat with breadcrumb mix.
  6. place coated fish sticks on sprayed baking sheet in single layer without touching each other.
  7. Bake in preheated 400 degree oven for 8-10 minutes. Then broil for additional 1-3 minutes or until crispy.
  8. allow to cool before removing from pan or fish sticks may fall apart.
ENJOY!!

all ready to eat!

  1. I've wanted a good "fake fish" to eat since I became a vegetarian. Why don't you use your powers of Google to help me out? :D

I am a stay at home mom to three great kids that keep me parenting outside the box. I take one day at time, lean on my Lord, and relish any and all advice that helps me or my kids, or me, or my family, did I say me? Seven years ago I lost my wonderful mother unexpectedly. There have been so many times I have wanted to pick up the phone to call and tell her something funny about the kids or ask her advice. So,this blog is dedicated to her, the dearest mommy in the world! I love you, mom!
