Start out with a nice white fish like Flounder or Talapia, bread crumbs, planko, or crushed corn flake cereal. (I used Planko, which is a Japanese style breadcrumb)

- Next you will need to cut up your fish. First I split it down the middle to make it easier to work with.
- Then I cut each piece evenly into three sections.
- Slice each piece length wise into strips.
- Mix three to four eggs in a shallow bowl and then coat fish strips thoroughly.
- Next coat with breadcrumb mix.
- place coated fish sticks on sprayed baking sheet in single layer without touching each other.
- Bake in preheated 400 degree oven for 8-10 minutes. Then broil for additional 1-3 minutes or until crispy.
- allow to cool before removing from pan or fish sticks may fall apart.
