delicious low calorie breakfast

   For all those out there battling the scales like me, I thought I would share a great low calorie breakfast recipe. I got this recipe a few years ago out of the South Beach diet book. It is great because you can make it the night before and it is ready to grab and heat in the morning in less than 2 minutes! Perfect for busy working moms or us stay at home moms who aren't wanting to put a lot of effort into OUR food after working overboard to get the kids fed a good meal and out the door to school.

   Feel free to modify this recipe to your individual taste buds! It is a very flexible recipe. Just remember the goal is to keep it low in calorie.

Breakfast egg cups
 
8 eggs
frozen chopped spinach (thawed and cooked) 
diced red onion
diced mushroom   


 1. Beat the eggs together in a bowl. Add the rest of the ingredients as little or as much you like, it's up to your preference. Season to taste with salt, pepper, and a little hot sauce if you choose. Mix well.
2. Pour into sprayed muffin cups. Bake @ 350 degrees until the egg is cooked through. 
3. Cool completely before removing from muffin tin. Then store in the refrigerator in an air tight container. 
4. Two egg cups = one serving. Is excellent served warm with a little salsa drizzled on top!!
